Potatoes cooked in Beet JuiceShow: Dec 5thIngredients:Makes about 15 slices1 Large Potato, sliced about 1/4 inch thick Procedure:Heat the juice from the can of beets to a simmer; slice the potato 1/4 inch using a mandoline. Drop the slices of potato into the juice and cook until the potatoes are tender to a fork. Serving Suggestions:Use these and top with sour cream, caviar, Gravlax, Smoked Fish or Beef Carpaccio.
